Good in the Hood - KidSpace Volunteers Needed

Good in the Hood is a great neighborhood event in NE Portland on June 25 and 26. They have a KidSpace area this year with crafts and activities. Parent Survey for State Agencies

hi ~

Parent Survey for all parents in Oregon related to ealry childhood programs.

Please help spread the word about an online survey to all Oregon parents of children under 10 and expecting parents.

They would like to hear from ALL parents of young children in Oregon. They are especially hoping to reach communities that are not always fully represented, such as immigrants, faith-based communities, or communities of color. Please be sure to include these contacts in your local outreach efforts.

The information from the survey will be made available for use by state and local communities for future funding opportunities and program development.

This Parent Survey has a very short time line. Please forward to your networks ASAP so we are able to learn more about your local community. May 11, 2011 through June 6, 2011.

Working Mom's Recipe of the Week

No-Bake Granola Bars
Servings = 12 bars

Ingredients
1/3 c roasted, unsalted almonds
1/3 c roasted, unsalted sunflower seeds
2 c rolled oats
1 c chopped dates
1/2 t cinnamon
dash salt
1/2 c mini chocolate chips
2/3 c honey

Directions
In a food processor, pulse almonds and sunflower seeds until broken up. In a large bowl, mix all dry ingredients. Heat honey in microwave for 30 seconds; pour over oats. Mix with spoon. Cover a cooking sheet with parchment paper or foil. Dampen your fingers with water and then scoop the oat mixture onto cookie sheet. Press into an 8 by 12 inch rectangle, dampening your fingers if the mix starts to stick. Place in freezer for 20 minutes. Cut into 12 bars. Individually wrap and keep in fridge for up to 2 weeks.

Notes: If you don't want to use chocolate chips, replace with currants, raisins, dried cranberries or any other dried fruit. You can use roasted, unsalted pecans or pumpkin seeds instead of sunflower seeds.

Working Mom's Recipe of the Week

Dilled Salmon Cakes
Servings = 4 (2 salmon cakes each)

Ingredients
2 12-oz salmon fillets
2/3 c dry breadcrumbs
1/4 c chopped green onions
2 T chopped fresh dill (or 1 1/2 t dried dill)
2 large egg
1/4 t black pepper
2 T olive oil
1/2 c plain low-fat green yogurt
1/2 c peeled, seeded grated cucumber
1 t grated lemon rind
1/4 t salt

Directions
Preheat oven to 350 F. Place salmon on a greased cookie sheet. Cook 25-30 min or until it flakes with a fork. Remove skin and any bones; flake with fork into a medium bowl. Add breadcrumbs, green onions, dill, egg and pepper. Form into 8, 1/2 inch thick patties and set on aside. Heat olive oil in large skillet over medium-high heat. Add 4 patties to the skillet. Cook 4 minutes, flip and cook 4 minutes. Place on a plate and keep warm. Cook the remaining salmon patties.

While the patties are cooking, in a small bowl combine yogurt, cucumber, lemon rind and salt. Mix well. Serve sauce with salmon patties.

Notes: Good side dishes include cucumber and cherry tomato salad or asparagus or trimmed green beans.
